As for the vineyard, we've chosen a less trodden path, delicately working the soil to preserve the microbiota and intricate structure that infuse our wines with unparalleled character.

The almost annual solar radiation and the southbound Sirocco winds during the growing season allow the plants to grow and develop homogeneously, preventing fungal diseases and minimizing the need for interventions with phytosanitary products. All our vineyards are equipped with sensors that monitor the irrigation and nutritional status of the plants, enabling us to provide the right amounts of water and nutrients to nurture our vines.
In anticipation of climate changes, during the hottest periods of the season, the leaves are shielded with natural minerals like Kaolin and Zeolite. These minerals lower the canopy temperatures, retain water, and act as a natural repellent against insects.
Along the rows, a winter mix of plants is sown, including carbon-rich grasses to boost soil organic matter, legumes contributing nitrogen, and brassicas shielding roots from pathogenic fungi and nematodes.
The vineyard borders are adorned with carefully selected plantings aimed at fostering a balanced ecosystem, where wild bees and beneficial insects thrive, creating a harmonious environment. Grapes variety
Although our vineyard encompasses a modest 7 hectares, it stands as a beacon of diversity, boasting an extraordinary array of both indigenous and international grape varieties. Among the local cultivars flourishing in our soil are Grillo, Nero d'Avola, and Frappato. Grillo, a native white grape variety of Sicily, takes center stage in Sicilian winemaking, earning esteemed recognition among the island's white wine offerings. Nero d'Avola, a red grape variety indigenous to Sicily, holds a prominent position as one of the island's most significant and widespread varietals, celebrated for its robust character and structural complexity. The name "Nero d'Avola" pays homage to the city of Avola, nestled in the province of Syracuse, where this grape has deep historical roots. Together with Frappato, a grape variety predominantly cultivated in the Vittoria area, they constitute the renowned Cerasuolo di Vittoria, the only Sicilian DOCG. Among the international grape varieties, our vineyard proudly features Cabernet Franc and Cabernet Sauvignon, Syrah, and Petit Verdot. The deliberate cultivation of these global varieties is a testament to our curiosity and a desire to witness how these esteemed grapes, celebrated worldwide, flourish in the unique terroir of our vineyard.

Vinification
In our conviction that the foundation of an exceptional wine lies in the outstanding quality of the grapes, we've cultivated a winemaking philosophy grounded in techniques that seek to extract the utmost expression from the grapes, the varietal, and the terroir. Our role takes on the character of a guide, gently ushering our grapes to become wine with minimal interference. The pivotal role of maintaining a pristine cellar and machinery cannot be underestimated in this pursuit.
Employing cutting-edge machinery, we delicately handle our grapes to preserve the integrity of the berries, ensuring only the finest essence is extracted. Fermentations are meticulously managed at controlled temperatures to showcase the aromatic bouquet inherent in our grapes. To safeguard these precious aromas, we strive to minimize oxygen contact during our winemaking process.
For the aging of our wines, we selectively choose the finest French oak barrels, blending new, moderately toasted barrels with those that have undergone multiple cycles. This approach aims to uphold the wine's integrity. Our cellar, insulated to minimize temperature fluctuations, serves as a sanctuary for our wines, allowing them to gracefully evolve and mature over time.

For the winey tastings, we present two options featuring three and five glasses.
1. "Let the World Learn About Sicily..."
This tasting experience showcases three wines crafted from indigenous Sicilian grapes: 100% Grillo, Cerasuolo di Vittoria DOCG, and 100% Nero D'Avola.
2. "...And Sicily About the World."
Building upon the exploration of native varietals, this tasting includes an elegant Chardonnay and a blend of international red grape varieties.
